Ritz-Carlton Bangalore – Many worlds collide

Ritz-Carlton Bangalore brings us Many Worlds Collide, a gastronomical fest crafted by
Chef Victor Scargle from Napa Valley California, the destination for great wine and food. He is the Culinary Director of Boisset Collection, which is a family-owned selection of historic, unique and authentic wineries.

Chef Victor who is an advocate of the Farm to Fork concept, literally gets to the root of his craft as he works with his hands in the soil. He is of the firm belief that one should be aware of how and where one’s food has begun its journey from, from the time it has been planted and until it is set on the plate.

This was his first visit to India and it was commendable that he looked as fresh as the ingredients that he works with, with no sign of being jet lagged whatsoever 

This culinary experience is coupled with the International Wine Range from Fratelli India and promises an exhilarating meal where many worlds actually, gently blend (which to me sounds more non violent than collide  )

Fratelli meaning brothers in Italian, is an Indo Italian venture (between brothers from Italian and Indian families) culminating in a modern winemaking facility in Akluj, in Solapur, using the grapes from their own vineyards that they have planted there.

Some of the highlights of this skillfully crafted menu are,

Trio of Salads with baby beet, watercress, sherry vinegar, baby carrot confit, curry shallots, mixed greens, radish, cucumber and champagne vinaigrette.

Sautéed Local Seabass with celery root puree, herb salad and lemon caper brown butter.

Greenpea tortellini with confit tomato and parmesan foam.

Reggiano Gnocchi with kale pesto, wild mushrooms and balsamic glaze.

Rack of New Zealand Lamb with ratatouille, kale and lamb jus.

Pan Roasted Duck Breast with forbidden rice, bok choy and sauce a la orange … which would be as La di lah as it sounds 

Dessert is a Dark chocolate beignet with seasonal fruit.

I was invited for a preview to this extravaganga, at which we sampled the Sea bass and the Tortellini.

 

The wines that were served were the white Sangiovese Bianco and Vitae Tre (,made by fusing 3 different varieties of grapes), followed by the red Sette.

 

The schedule of events for the short duration that the chef is here, is as follows –
Dinner on Nov 26th, 27th and 28th, 2017 with a set menu by the chef, paired with Fratelli’s International Collection Wines. Price – INR 4500 + taxes.

A Sunday brunch on Nov 26th priced at –
Non alcoholic at 2750 AI,
Sparkling wine brunch at 3950 AI and a
Champagne brunch at 4500AI

In addition, for cooking buffs, the chef will hold what promises to be a very interesting cooking Class on Tue, Nov 28th at the Riwaz with lunch at The Market. This is priced at INR1500 + taxes.

    Love farm to fork. I cook and do my shopping that way. Use as little of processed food as I can unless I can’t get to a local farm or the farmers market.
    Napa has some of the best food, cheeses and wines here in California.
